Does our clients' data go to OpenAI or a similar service?

That depends on what is agreed, and it is defined before anything is set up. For sensitive parts there is processing that stays on your infrastructure. If an external service is used, exactly which data is sent, how long it is retained and whether it is used for training are all specified.

How reliable is invoice reading?

On clean printed documents, very. On a photo of a crumpled receipt, less so. That is why the confidence threshold is adjustable and everything below it goes to a person.

Does this replace our accounting software?

No. It sits in front of it and feeds it clean data. The software stays where it is.

Our clients send documents through a chat app and that will not change.

It does not have to. Messages with documents can be received and processed automatically, leaving the portal as an option for those who want order.
